Maine hard-shell lobster lives in cold Atlantic water that rarely exceeds 55°F. Cold water forces slow growth — and slow growth produces denser, sweeter, more complex meat than anything grown in warm water.
Most restaurants and grocery stores serve warm-water spiny lobster from the Caribbean or Southeast Asia. It's cheaper, easier to source frozen, and noticeably flat by comparison. Once you taste cold-water Maine, you'll know the difference.
